ST. LOUIS—Rising food prices have an adverse effect on nutrition because consumers move away from luxury food items such as meat, fish and dairy products to more affordable foods with less quality, according to a new study that will be published in an upcoming issue of the Food and Nutrition Bulletin.
Researchers form the International Food Policy Research Institute (IFPRI) examined the effects of food price hikes on calorie consumption in seven Latin American countries.
Using data from nationally representative household budget surveys, they found during a food price crisis calorie intake was reduced an average 8 percent from pre-crisis levels; rural areas and urban areas were equally affected; and the wealthiest households actually increased caloric intake, exceeding 10 percent of pre-crisis levels.
The researchers discovered households shifted from buying meat, fish and dairy products to poorer quality food. They said the reduction in calories and critical nutrients for children under age 2 could pose long-term consequences such as stunted growth, cognitive deficits, lower educational attainment and reduced future productivity.

Prices also rose after droughts and floods from Australia to Canada ruined crops last year. European farmers are now contending with their driest growing season in more than three decades.
#4 According to the World Bank, 44 million more people around the globe have been pushed into extreme poverty since last June because of rising food prices.
#5 Sadly, rising food prices is not a new trend. According to the UN Food and Agriculture Organization, the global price of food has gone up by 240% since 2004.
#6 To a large extent, this global food crisis has been brought on by the greed of the wealthy. A study by the World Institute for Development Economics Research discovered that the bottom half of the world population owns approximately 1 percent of all global wealth.
#7 The average income per person in the poorest countries on the continent of Africa has fallen by one-fourth over the past twenty years.
#8 It is estimated that over 80 percent of the world's population lives in countries where the income gap between the rich and the poor is widening.

#10 Every 3.6 seconds someone starves to death and three-quarters of them are children under the age of 5.
